That gluten free fried chicken life

A wee while ago I posted a fried chicken recipe on Facebook and it was pretty well received! Anyway, fast forward and I’ve had a few people ask me “do you have a gluten free friend chicken recipe?” to which I respond “yes, you can find it on Facebook!” Now not everyone uses Facebook and let’s face it, no one wants to scroll through months of Facebook posts to find it so I thought I had better post it on here, so it’s easier for you all to find.


Ok I know, I can hear you saying, uh this is baked. But do you want to know a secret?


This recipe would work well deep fried too.

Here’s what you’ll need.

  1. 1 cup of Free From Gluten Breadcrumbs (you can get this from Countdown in NZ and Woolworths in Australia)

  2. 1/4 cup of Free From Gluten Flour

  3. 500 grams of chicken breast

  4. 2 eggs

  5. Seasoning mix – I like to use 1 tsp of chilli powder, cumin powder, garlic salt and paprika, and then ¼ tsp of cayenne pepper.

Mix the seasoning and the breadcrumbs together. Coat the chicken in flour, then egg, then the crumb mix.


Lay on a baking tray and bake at 180 deg for 25 minutes or until the chicken is fully cooked and golden. Serve with your fave hot sauce for extra hot and spicy flavour.
