Not All Puddings Are Created Equal

Imagine being able to completely and totally cure a chocolate craving, without feeling totally guilty afterwards. I can already hear you saying GIRL, YOU’RE CRAZY, THAT’S IMPOSSIBLE.


P.S I don't think you should ever feel guilty about eating ANYTHING.


HA. No it’s not. And I don’t mean to toot my own horn, but I’ve created the most amazing, high fat, low carb, refined sugar-free pudding you’ll ever have.


Equal Spoonful is a brand that most kiwi homes will recognize. It’s is a great choice for people who want to cut back on sugar and calories, and still enjoy a great sweet taste. So I thought, I bet Equal Spoonful is my answer to all my cravings.


It was.

Here’s what you’ll need:

  1. 2 eggs

  2. 1/2 cup of Equal Spoonful

  3. 1 tsp of pure vanilla paste (or essence, I used a paste as it’s a lot richer in flavour)

  4. 1 tablespoon of raw cacao

  5. 125 grams of cream cheese

  6. 1 cup of cream

Method:

Now this is the most involved part of the recipe and you need to pay a bit of attention – you don’t want to scramble your eggs!


Over a bain-marie (water bath, use a medium-sized pot and a bowl that can sit over the heat) use an electric whisk on medium speed and blend your eggs and Equal Spoonful together. Slowly, the eggs will start to go pale and you will find it turning into a custard-like consistency. Do this for approx 5 minutes, then remove from the heat, add vanilla and whisk until mixed through and smooth.


Set aside in the fridge for approx two hours or until chilled. If you have time, leave it overnight.

Serve in your favourite glass dish – top with crushed mixed nuts and shaved dark chocolate (make sure it’s pure dark chocolate to avoid refined sugar)
