While everyone's out there making lockdown loaf, I'm over here screaming WHERE IS THE DIP. That's right, I didn't bloody buy the two key ingredients needed to make a classic kiwi onion dip. So, I decided I'd try and make my own. And guess what? It's goooooooood.
To make lockdown dip you need
1x red onion
1x brown onion (small to medium-sized)
AT LEAST - 2 BIG tablespoons of each of greek yoghurt and cream cheese
1 BIG tablespoon of cream and mayo
Half a tsp of tarragon
1 tsp of crushed garlic
25 grams of butter.
Salt and pepper to taste
Chuck the butter, onions, garlic and tarragon into a pan and fry away over medium heat, until they're soft and have good colour on them (you could also roast them if you wanted to) from there, throw everything into a bowl, whizz it up with a stick blender and let it sit in the fridge for about an hour or overnight if you have the patience.
