I can't believe it, the new year is here! We ate soooooo much food over the holidays, and now I am trying my hardest when and where I can to get something “healthy” in me – haha!
We’ve had an influx of peaches come off our trees and family members trees. It’s at the point where we can’t keep up! We’ve bottled some, eaten them fresh, given them away, and we’ve still got hundreds!
This recipe is simple and can be used with any sort of stone fruit you might be inundated with.
Peaches (I used about 7, cut in half, remove the stone)
Brown Sugar or Honey
Cinnamon Sticks (or powder, whatever is available to you)
Cut peaches in half and remove the stone. Place on a baking tray and sprinkle with Cinnamon Sticks or Powder (enough to your liking)
Place either a tsp of Honey or Brown Sugar over each peach, along with half a tsp of butter. Sprinkle a handful of Almonds over the top of the peaches. Bake at 180* for 20 minutes or until golden, and caramelized. Whip cream and vanilla together.
Serve Warm – Enjoy!!
